10:00 AM - 10:15 AM: Welcome & Introduction

  • Grab a brew
  • Brief overview of the day
  • Introduction to Ben, Alex and Will from Dunwood Farm


10:15 AM - 10:30 AM: Understanding the Source (Dunwood)

  • Discussion on cattle breeds, feeding practices, and sustainable farming


10:30 AM - 11:30PM: The Art of Butchery (Dunwood)

  • Demonstration of beef breakdown.
  • Identifying cuts suitable for BBQ grilling, smoking, and slow cooking
  • Hands-on session: participants try basic butchery techniques. You’ll be shown how to butcher your own cote de boeuf, which you will trim up and take home at the end of the day


11:30 PM - 12:00 PM: The Science of Dry Ageing (Dunwood)

  • Explanation of dry ageing process and its impact on flavour and tenderness
  • Demonstration of different stages of aged beef
  • Tasting session: comparing fresh vs. aged beef


12:00 PM - 1:00 PM: Lunch Break

  • Brisket sandwich with all the trimmings prepared by Alex and Ben (Blok)


1:00 PM - 2:30 PM: Cooking Masterclass (Blok)

  • Demonstrating BBQ techniques: direct/indirect grilling, smoking, searing
  • Cooking a variety of Steak cuts using different techniques
  • Tips on seasoning, marinades, and resting meat
  • Interactive cooking: participants grill their own beef cuts


2:30 PM - 3:00 PM: knife skills

  • Ben to give a knife skills overview


3:00 PM - 3:30 PM: Questions and farm tour

  • Any final questions from the day to be covered off 
  • Farm tour ending with a trip to the shop


3:30 PM - Finish
